A latch simply keeps a door closed. A lock provides security or privacy, depending on the type.
It varies. Bathrooms typically require privacy locks or bolts. Some people like to use them on bedrooms, whilst others are happy with just a latch. External doors require secure locking. There is no one-size-fits-all answer.
The backset is the distance from the edge of a latch or lock and the spindle hole or keyhole. Importantly, it determines the placement of your handles on the door. It needs to suit your door proportions, especially if your door has narrow stiles. Ideally, your handles will be as close to the centre of the stile as possible.
You can, but the question is, should you? They generally look out of place. Traditional options such as mortice locks are usually more appropriate for period homes. High-security options are available.
